The soil is sandy loam, a mix of loam and sand with good drainage and ample nutrients, which contributes to the wine's bright, fresh signature. The base wine undergoes controlled fermentation in stainless steel and partially in oak barrels, after which Champagne yeast is added in the bottle for the sparkling aging. The secondary fermentation and aging in the bottle last 12 months, after which the wine is disgorged and rested for a further two months to develop a fine mousse and a taut finish.
