Careful winemaking at Von Winning
Von Winning applies the same strict winemaking standards as in the Champagne region. However, instead of using Chardonnay grapes, as in Champagne, they choose the elegant Riesling grape. The grapes are harvested manually and selectively. They are then gently pressed in the winery. The juice is transferred to stainless steel tanks for fermentation. This primary fermentation takes place in these tanks to preserve the fresh and vibrant character of the Riesling grape. After the primary fermentation, the wine is bottled. At this point, it is still a still white wine without bubbles. A mixture of sugar and yeasts is then added to the bottled wine, and the bottles are hermetically sealed. The secondary fermentation begins in the bottle, where the yeasts convert the sugar into alcohol and carbon dioxide, giving the wine its sparkling character. After the secondary fermentation, the wine is aged in the bottle for 15 months on its lees.
