Marius Vermentino is a white wine produced in the Languedoc-Roussillon region of France by Chapoutier. Vermentino is a Mediterranean grape variety, originally from Italy, also known as Rolle in Provence. In this form, Vermentino presents itself as a rich, fruity, and beautifully balanced wine.

The vinification process of Chapoutier Marius Wit

Chapoutier's origins go back to 1808, when this family began cultivating wine. Today, they own 240 hectares of vineyards in the Rhône Valley. They operate entirely biodynamically and often focus on a single grape variety, combining the true expression of each grape variety with the region's unique terroirs. To achieve a balanced and complex harvest, the selected vineyards are cultivated on clay and limestone slopes. This type of location offers favorable conditions for sun exposure on the slopes, as well as sufficient water reserves in the limestone soil, allowing the vineyards to reach the desired ripeness. Harvesting is carried out at night to protect the grapes from oxidation, resulting in richer yet fresher wines. The pressing is direct, without maceration, and alcoholic fermentation is carried out at a low temperature. Once alcoholic fermentation is complete, the wines are cooled and aged on the fine lees to enhance their minerality. Finally, they are aged for five months on the fine lees in stainless steel vats.
