The story of this winery begins with former professional cyclist Anita Neveu, who, after her athletic career, decided to pursue her passion for wine. The grapes for this wine come from the Aux Caves vineyard, situated at an altitude of 240 meters in a subsoil of weathered pink granite. What makes this wine so special is that the grapes are picked and selected at night in the vineyard. After being harvested by hand, the grapes undergo Beaujolaise vinification techniques, which involve cold maceration. This develops a fruity character and a smooth flavor structure. The wine is then aged for seven months in cement tanks and three months in bottle.
First and foremost, this Reine de Nuit Moulin a Vent boasts a beautiful ruby-red color with a purple hue. This wine is very elegant and has a delightful floral aroma with notes of roses and irises, combined with sweet raspberry and strawberry aromas.
