The grapes are hand-harvested to guarantee the highest quality. The Primitivo skins ferment for a very short time, just a few hours. This minimizes the color of the skins, allowing the rosé to retain its beautiful light color. Fortunately, this has little impact on the flavor, as the Primitivo grape is known for its flavorful character.
