The grapes for the wine come primarily from Tasmania. This island south of Australia is considerably cooler than the mainland. The vineyards are cooled by the Antarctic wind from the south. This cooling is necessary to maximize the freshness and natural acidity of the wine. The entire process was initiated by the French Champagne house Roederer (known for Cristal), but is now owned by the Australian quality producer Yalumba.
