Vineyards and region
The grapes are grown on the organic Pizzolato vineyards in northern Veneto, near Treviso. Here, the temperate climate with cool nights and sunny days ensures perfect ripening. The soil consists of limestone and clay, which contributes to the wine's fresh minerality. The winery is fully organic and vegan and is certified according to EU guidelines.
Vinification and maturation
After harvest, the grapes undergo a gentle pressing and cold fermentation in stainless steel tanks. The second fermentation takes place using the Charmat method at a low temperature to preserve the fresh character. The wine is briefly aged on the fine lees and bottled as Extra Dry Spumante, with a subtle residual sweetness and a lively mousse.
