It's also important to prune properly to prevent the grapes from molding due to excessive moisture. The vineyards with these three beautiful varieties are planted at different altitudes. Airen and Sauvignon Blanc are planted higher than Verdejo, which prefers a much warmer climate than the two cooler grape varieties, Airen and Sauvignon Blanc. When the grapes reach the correct ripeness for each variety, they are harvested, pressed, and vinified. Only then is the final blend composed.
