The story of Cava Mont Marcal Extremarium Rosé is a romantic one. The name Extremarium comes from Latin and means limit or barrier. This barrier translates to the "barrier-like" vineyards that Mont Marcal owns. These vineyards are surrounded by mountains, which form a natural barrier. The climate, in particular, is the grapes' greatest enemy. However, Manuel Sancho already saw potential in this area in 1975 when he founded the Mont Marcal winery in Penedes. In 50 years, Mont Marcal has grown into one of the largest wineries in Penedes.

The vineyards of Mont Marcal

Cava Mont Marcal Extremarium Rosé is made exclusively from Pinot Noir grapes, a grape originally from France. This grape is also essential for Champagne. The grape doesn't like excessive heat, so planting it in Mont Marcal was a risk. However, the vineyards are located in the Penedes region, which is relatively close to the sea. This allows for a gentle nighttime breeze to blow across the vines, which the Pinot Noir loves immensely! After the hand harvest, vinification begins. The Pinot Noir skins are only briefly fermented, giving Cava Mont Marcal Extremarium Rosé a beautiful salmon-pink color.
