The grapes come from the El Oasis Estate in the Alto Valle de Uco, within the Mendoza wine province.

Soil: The soils of Salentein's vineyards are predominantly alluvial, with sand over a stony subsoil. This composition ensures good water drainage.
Cool fermentation and contact with the yeast define the character of this cuvée.

Fermentation: The base wines ferment separately at a low temperature to preserve the fruit aromas. The second fermentation takes place in a sealed tank according to the Charmat method; this is how the bubbles are created.

Aging: The wine remains in the tank on the yeast cells for 6 months, also known as sur lie. This provides extra roundness and a subtle yeasty touch.
