Simonnet-Fèbvre Blanc de Blancs Méthode Traditionnelle
The Simonnet-Fèbvre Blanc de Blancs Méthode Traditionnelle is a refined sparkling wine for aperitifs, light fish dishes, and moments when you want to enjoy Chardonnay in a fresh, elegant mousse. Its special quality lies in the combination of 100% Chardonnay, a fine traditional bottle fermentation, and a style that deliberately remains pure and delicate. This method is even reflected in its name. What is méthode traditionnelle? It is a method where the second fermentation takes place in the bottle, allowing the wine to develop its fine bubbles and additional complexity.
Vineyards and region
The foundation of this wine lies in a simple yet effective choice of origin, focusing on freshness and finesse.
- Location / Origin: This wine falls under the category of Vin Mousseux de Qualité. Thus, the house opts not for an appellation like Crémant de Bourgogne, but for its own sparkling style within the French quality category for sparkling wine.
- Soil: The subsoil is clay and limestone. This is a classic combination for Chardonnay that effectively supports tension, freshness, and a fine linear profile.
Vinification and aging
The cellar approach here is entirely focused on fine mousse, precision, and a dry, pure style.
- Fermentation: The wine is made using the traditional method, with a second fermentation in the bottle, and receives a dosage of 6 g/l. This keeps the style crisp and refined, with enough roundness to allow the Chardonnay to express itself beautifully.
- Bottle aging: The wine ages for a minimum of 9 months. This allows the mousse to settle more and creates a more elegant, better-integrated bubble.
- Aging potential: This cuvée is best enjoyed within 2–3 years, when its freshness and refinement are at their peak.
Grape composition
Here, everything revolves around one grape, precisely what gives this wine its crisp and clear signature.
- 100% Chardonnay – France: Chardonnay forms the complete basis and gives the wine its elegant florality, ripe fruit notes, and refined tension.
Tasting notes and serving suggestions
Pale yellow in the glass, with fine bubbles and a delicate mousse. On the nose, this Blanc de Blancs opens with white flowers and ripe fruit, in a style that remains refined and pure. On the palate, it comes across as precise and lively, with a clean dry line that perfectly matches its elegant profile.
- Serving temperature: 6–8 °C works best here, as this range clearly brings out the freshness, fine mousse, and floral nuances.
- Dishes: Aperitifs, light fish dishes, and refined appetizers pair best here, as the wine primarily focuses on elegance, freshness, and a fine mousse.
