The Simonnet-Fèbvre Crémant de Bourgogne Brut Blanc is a refined sparkling Burgundy for aperitifs, seafood, and moments when you want to serve freshness with more gravitas. The house has been making sparkling wines using the traditional method since 1840 and is still the only maison in Chablis that produces Crémants de Bourgogne. The dosage of 7 g/l keeps the style beautifully dry. What does Brut mean for sparkling wine? It stands for a dry style with a limited dosage after disgorgement. 

Vineyards and region

The origin of this Crémant lies in the cool north of Burgundy, precisely where tension and acidity have a great influence on the style.

  • Location / Origin: Although Crémant de Bourgogne can be made throughout Burgundy, Simonnet-Fèbvre sources most of the grapes for this wine from in and around Chablis. This northern part of Burgundy gives the fruit precisely the fresh acidity that works so well for sparkling wine.
  • Soil: The vineyards are located on Jurassic marl and limestone. This classic North-Burgundian subsoil perfectly matches a Crémant with tension, finesse, and length.
  • Vineyard: The average age of the vines is 20 years, and the yield is 65 hl/ha. This suits a style that prioritizes vibrancy and consistency over pure power.
  • Regional Context: Crémant de Bourgogne received its official AOC status in 1976. This means this wine belongs to an appellation that has represented the classic sparkling style of Burgundy for decades.

Vinification and aging

The cellar approach here is entirely focused on precision, fine mousse, and a dry, harmonious style.

  • Fermentation: The base wine is fermented in stainless steel tanks. This is followed by the traditional method with a second fermentation in the bottle, ensuring fine bubbles and maintaining the wine's crisp, fresh line.
  • Aging / Bottle Aging: The wine ages for 24 months, which gives it extra refinement, a persistent mousse, and more length on the palate.
  • Dosage: With 7 g/l, this brut remains beautifully dry, while retaining just enough roundness to keep the wine approachable and balanced.

Grape composition

This blend combines two classic Burgundy grapes that complement each other beautifully in sparkling form.

  • 60% Chardonnay – Burgundy: Chardonnay gives the wine its fresh attack, citrusy lift, and crisp line.
  • 40% Pinot Noir – Burgundy: Pinot Noir adds extra breadth, structure, and a softer roundness in the middle of the palate.

Tasting notes and serving suggestions

Light yellow in the glass, with fine bubbles and a persistent mousse. On the nose, this Crémant opens fresh and powerful with citrus, followed by a soft, refined taste and a beautiful length. The finish remains lively, dry, and refreshing.

  • Serving Temperature: 6–8 °C works best here, as this range beautifully preserves the freshness, fine mousse, and dry tension.
  • Dishes: Aperitifs, smoked salmon, oysters, and other shellfish pair wonderfully, as this Crémant has enough freshness and precision for salty, refined flavors.

Maison Simonnet-Fèbvre was founded in 1840 and is one of the oldest wineries in Chablis. The house started with Sparkling Chablis, the historical precursor to the current Crémant de Bourgogne, and built upon that for generations. Since 2003, Simonnet-Fèbvre has been part of Maison Louis Latour, but it still operates with its own style and remains the only producer in Chablis with a complete line of Crémants de Bourgogne.
