The Simonnet-Fèbvre Crémant de Bourgogne Brut Rosé is a sophisticated sparkling rosé, perfect as an aperitif, with red fruit desserts, and for festive occasions where you want to combine freshness with elegance. Its uniqueness lies not only in its Pinot Noir base, but also in the fact that Simonnet-Fèbvre, as a Chablis house, has held a strong reputation in sparkling Burgundy since the 19th century. This cuvée is made using the traditional method. What is the traditional method? It's a process where the second fermentation takes place in the bottle, resulting in a fine and persistent mousse.

Vineyards and Region

Its origin lies in the northern part of Burgundy, where fresh acidity and chalky soils largely define the style.

  • Location / Origin: The grapes come from the Yonne region of Burgundy, with a clear focus on the area around Chablis. This cooler northern part of Burgundy provides precisely the tension that sparkling wine needs.
  • Soil: The vineyards are located on clay and limestone from higher altitude plots. This combination helps maintain freshness, precision, and a crisp line in the wine.
  • Vineyard: The average age of the vines is 20 years, and the yield is 65 hl/ha. This suits a style that prioritizes vibrancy and consistency.
  • Regional Context: Crémant de Bourgogne received its official AOC status in the 1970s and today constitutes Burgundy's classic sparkling appellation outside of Champagne.

Winemaking and Aging

The cellar approach here focuses on pure fruit, fine bubbles, and a dry, harmonious style.

  • Fermentation: The base wine is fermented in stainless steel tanks. This is followed by the traditional method with a second fermentation in the bottle, which creates a fine mousse and a lively, precise structure.
  • Aging / Bottle Aging: The wine ages for 18 months sur lattes. This provides extra refinement, more calmness in the mousse, and a more beautiful length in the glass.
  • Dosage: At 8 g/l, this brut remains pleasantly dry, while retaining enough roundness to keep the wine smooth and approachable.

This crémant is entirely built on one grape, which gives it a unique rosé profile within the house's range.

  • 100% Pinot Noir – Burgundy: Pinot Noir forms the complete base here and gives the wine its beautiful rosé color, fine red fruit notes, and soft, refined structure.

Tasting Notes and Serving Suggestions

Beautiful rosé in the glass, with fine bubbles and a fresh, lively mousse. On the nose and palate, Pinot Noir comes through beautifully with raspberry, redcurrant, strawberry, and cherry, supported by a dry and elegant style. The finish remains refined, fresh, and delightfully drinkable.

  • Serving Temperature: 6–8 °C works best here, as this range keeps the freshness, fine mousse, and red fruit crisp and vibrant.
  • Dishes: Aperitif, red fruit desserts, chocolate, and also light appetizers with smoked fish or shellfish pair beautifully, as the wine skillfully combines dryness, fruit, and elegance.

More information about Simonnet-Fèbvre

Maison Simonnet-Fèbvre was founded in 1840 in Chablis and is one of the oldest houses in the region. It quickly made a name for itself with Sparkling Chablis, the historical predecessor of today's Crémant de Bourgogne, and remains the only house in Chablis with a complete line of Crémants de Bourgogne to this day. Since 2003, Simonnet-Fèbvre has been part of Maison Louis Latour, while maintaining its own style and independent identity.
