Simonnet Fèbvre Chablis 2022 0.375L is a half bottle of classic Chablis from the north of Burgundy, made in the fresh, mineral style for which this area is so beloved. The wine ages on stainless steel and on its fine lees, preserving its pure fruit, tight structure, and elegant length. This format is ideal when you want to open a beautiful white Burgundy without needing a full bottle.

Chablis is located in the northern part of Burgundy and is known for white wines with freshness, tension, and a recognizable limestone expression.

Location / Origin: The wine comes from the Chablis Village appellation. What is Chablis? Chablis is an appellation in northern Burgundy where cool conditions and chalky soils create fresh, mineral white wine.

Area: Chablis is the largest appellation in the region, with 2900 hectares of vineyard. The grapes can come from different villages, slopes, and flatter plots within the appellation.

Soil: The soil consists of Kimmeridgian clay and limestone. This chalky soil is one of the reasons why Chablis is so often recognized for its mineral, crisp, and almost saline character.

Vineyard & Harvest: The vines are on average 35 years old. This age contributes to more consistent ripening and gives the wine extra depth within its fresh style.

Yield: The yield is around 60 hl/ha. This is typical for the Chablis appellation and results in a wine where freshness, aromatic purity, and drinkability are central.

Vinification and aging

The vinification focuses on precision, freshness, and the pure character of Chablis.

Fermentation: Fermentation takes place in stainless steel tanks at 16–19 °C. This cool, controlled fermentation helps preserve fresh citrus, floral notes, and mineral tension clearly.

Aging / Oak Aging: The wine ages for 6–10 months on stainless steel on its fine lees. Lees aging adds extra texture and length, while stainless steel maintains Chablis' crisp, pure style.

Maison Simonnet-Febvre was founded in 1840 and is one of the oldest traditional houses in Chablis. The house historically started with sparkling wines and is still the only producer in Chablis with a complete range of Crémants de Bourgogne. Since 2003, Simonnet-Febvre has been part of Maison Louis Latour, but the house continues to operate as an independent entity with its own style, focused on terroir, purity, and precision.
