Henri Bourgeois is a Sauvignon Blanc expert and winemaker in regions including the Loire, Marlborough, and Sancerre. For ten generations, the winery has been passionate about Sauvignon Blanc in the heart of Sancerre. Today, the family owns 65 hectares of vineyards in the finest subregions of Sancerre and Pouilly-Fumé. They also operate in the Loire and Marlborough regions, where they know how to bring out the best in the grapes and soil.
After pressing, the juice undergoes two days of natural clarification through sedimentation. It is then placed in barrels and tanks. Alcoholic fermentation transforms the natural sugars into the soul of the wine, while the grape pulp creates a rich bouquet. Sancerre Jadis is pickled and bottled according to the lunar cycle and is sure to delight your taste buds—but first, you must let the wine pass its first Easter holiday.
The greenish-gold color has a number of bright and luminous reflections. The nose is quite expressive and complex, evolving throughout the tasting. It opens beautifully on exotic fruit, green mango, citrus, honey, and a hint of menthol. The palate is powerful, round, and harmonious, but you'll also taste a refreshing and sharp minerality. A powerful dry white wine that pairs well with robust dishes, such as grilled sea bass with fennel, and with a lovely, ripe Saint-Nectaire as a cheese.
