Baud owns 3 hectares in the LEtoile appellation, which focuses exclusively on the production of white wines. These wines are characterized by their minerality and delicacy. This Chardonnay also exhibits this: beautiful nutty aromas complemented by a round mouthfeel with well-balanced flavors.
The success of Baud winery
The Baud estate's origins go back to 1742, when Jean-Francois Baud began working as a pieceworker. The family earned their living on the estate through mixed farming. In 1950, René Baud, the seventh generation, rebuilt the vineyard, which had suffered significantly during the vine aphid crisis. In 1978, the eighth generation established the winery and gave the winery a new lease of life. Thanks to all these years of dedication, the estate grew from 4 hectares to around 20 hectares. The grapes are carefully harvested at peak ripeness, with quality as the top priority. A strict selection process takes place in the winery, after which traditional winemaking begins. First, alcoholic fermentation takes place in a temperature-controlled tank. The wine then matures for a further 20 months in French oak barrels. These barrels, built in the cellar 100 years ago, impart beautiful and unique characteristics to the final wine.The aroma and taste of Baud l Etoile Chardonnay
The nose is fruity, offering juiciness and a subtle concentration. We note notes of juicy citrus, mandarin, and lemon combined with subtle hints of almond. The palate is fruity and juicy, offering lovely freshness, minerality, and a pleasant acidity. Notes of pear, mandarin, and lemon also resonate in the palate. Wonderfully fruity and juicy, the flavors lead to a long, pleasant finish. The Etoile Chardonnay pairs particularly well with fish dishes, poultry, or a cheese board.
