This cuvée has been developed in the Ardèche since 1979, based on a clear Burgundian concept, with fermentation and aging in oak barrels from Louis Latour's own cooperage. Vineyards and region
The foundation of this wine lies in the Ardèche, where Louis Latour deliberately sought out top-quality Chardonnay outside the Côte d’Or since the late 1970s. The Grand Ardèche comes from the best plots, which are reselected each year at the start of the harvest.
- Location / Origin: The wine falls under IGP Ardèche, within the Côteaux de l’Ardèche region. This allows Louis Latour to produce a white wine in Southern France with a distinct Burgundian signature.
- Soil: The soils consist of clay and chalk. This combination gives Chardonnay sufficient tension and precision here, in addition to the ripeness you would expect from this more southerly origin.
- Vineyard: The average age of the vines is 20 years, and the average yield is 45 hl/ha. This helps to give the fruit sufficient concentration and consistency.
Vinification and aging
The cellar approach is the real distinguishing element here, as this wine is treated as if it comes from the white Burgundy region.
- Fermentation: Fermentation traditionally takes place in oak barrels, with full malolactic conversion. This gives the wine more roundness, a softer texture, and a beautifully integrated oak tone.
- Aging / Oak Maturation: Afterwards, the wine ages for at least 10 months in oak barrels, 25% of which are new. This gives it extra depth, toast, spiciness, and a broader mid-palate structure, without losing its tension.
- Barrels: The barrels come from Louis Latour's own cooperage and are made of medium-toasted French oak. This supports the wood profile in a refined, not overly dominant way.

Maison Louis Latour was founded in 1797 and remains independent and family-owned. The house is among the historic names of Burgundy, but has also deliberately developed new terroirs outside the Côte d’Or, including the Ardèche from 1979 onwards.
