- Location / Origin: Montmains is situated on the left bank of the Serein, in Chablis within northern Burgundy. Within the appellation, this Premier Cru is known for its refined, crisp style and clear terroir expression.
- Exposure: The vineyards are located on a south to southeast-facing slope. This provides the grapes with beneficial morning light and helps to beautifully combine ripeness and tension.
- Soil: The subsoil consists of Kimmeridgian Jurassic soil. In Chablis, this very chalky, fossil-rich soil is strongly associated with the salty, flinty minerality for which the region is so famous.
- Vineyard & location: Montmains consists of varied plots in a relatively low-lying area. This makes this appellation particularly susceptible to spring frost, which immediately indicates the precision required in the vineyard here.
- Vineyard: The vines are on average 35 years old and the yield is around 58 hl/ha. This gives the wine a lovely combination of concentration and refinement.
Vinification and aging
In the cellar, Simonnet-Fèbvre deliberately chooses an approach that allows the origin to speak clearly.
- Fermentation: Fermentation takes place in stainless steel tanks at 17–21 °C. This maintains a pure fruit expression and preserves the fresh, crisp character of Chablis.
- Aging / Oak maturation: The wine ages for 12 months on fine lees. This adds extra texture and length, while the mineral character remains beautifully intact.

Light greenish-yellow in the glass, with a nose of citrus and flint. On the palate, it is crisp, pure, and precise, with great tension and a beautiful mineral length. This is Chablis with focus, energy, and a very clear finish.

Simonnet-Fèbvre was founded in 1840, making it one of Chablis' oldest houses. The estate initially built its reputation with sparkling wines and later developed into a specialist in the various terroirs of Chablis, from village to Grand Cru. Since its acquisition by Maison Louis Latour in 2003, the house gained new momentum, while retaining its unique style and independent identity.
