The Simonnet-Fèbvre Chablis Premier Cru Montmains 2020 is a serious Chablis for those who appreciate tension, precision, and a distinctly mineral style. Montmains is located on the left bank of the Serein and belongs to the Premier Cru appellations that instantly bring extra status in Chablis. This classification speaks volumes about the vineyard's quality. What is a Chablis Premier Cru? It is a higher-level appellation within Chablis, originating from specifically recognized climats with a clear, distinct terroir and greater depth.

Vineyards and region

The quality of this wine begins in one of Chablis' most renowned Premier Cru zones.

  • Location / Origin: Montmains is situated on the left bank of the Serein, in Chablis within northern Burgundy. Within the appellation, this Premier Cru is known for its refined, crisp style and clear terroir expression.
  • Exposure: The vineyards are located on a south to southeast-facing slope. This provides the grapes with beneficial morning light and helps to beautifully combine ripeness and tension.
  • Soil: The subsoil consists of Kimmeridgian Jurassic soil. In Chablis, this very chalky, fossil-rich soil is strongly associated with the salty, flinty minerality for which the region is so famous.
  • Vineyard & location: Montmains consists of varied plots in a relatively low-lying area. This makes this appellation particularly susceptible to spring frost, which immediately indicates the precision required in the vineyard here.
  • Vineyard: The vines are on average 35 years old and the yield is around 58 hl/ha. This gives the wine a lovely combination of concentration and refinement.

Vinification and aging

In the cellar, Simonnet-Fèbvre deliberately chooses an approach that allows the origin to speak clearly.

  • Fermentation: Fermentation takes place in stainless steel tanks at 17–21 °C. This maintains a pure fruit expression and preserves the fresh, crisp character of Chablis.
  • Aging / Oak maturation: The wine ages for 12 months on fine lees. This adds extra texture and length, while the mineral character remains beautifully intact.

Grape composition

Here, everything revolves around one grape that reveals one of its most precise faces in Chablis.

  • 100% Chardonnay – Chablis Premier Cru: Chardonnay forms the complete base here, giving the wine its combination of citrus, tension, chalky precision, and a long mineral finish.

Tasting notes and serving tips

Light greenish-yellow in the glass, with a nose of citrus and flint. On the palate, it is crisp, pure, and precise, with great tension and a beautiful mineral length. This is Chablis with focus, energy, and a very clear finish.

  • Serving temperature: 10–12 °C works best here, as this range beautifully highlights both the fresh tension and the subtle complexity of the wine.
  • Dishes: Seafood, escargots, and smoked fish pair particularly well with this wine.

Accolades

  • 4.0 stars, Vivino: A strong score that aligns well with Montmains' reputation as a refined, classic mineral Premier Cru.
