When making this Capitel dei Nicalo, the grapes are left on the vine to dry slightly. After harvest, they remain in the baskets for another month to lose another 8 to 10 percent of their weight. Afterward, the grapes are pressed, producing a beautifully concentrated juice that is aged in oak barrels.
