Celler Kripta ICÒNIC Brut Nature Gran Reserva 2018

ICÒNIC 2018 is a long-aged Brut Nature from the heart of Corpinnat, precise and energetic with an exceptionally fine mousse and remarkable freshness. What does Brut Nature mean, and why do you taste so much tension? No sugar is added after disgorging, allowing the character of the grapes and their origins to flow unfiltered into the glass.

Vineyards and region

The grapes come from hand-harvested plots in the Anoia Valley, where chalky soils and a mild Mediterranean climate produce aromatic base wines with high natural acidity. The 2018 harvest ran from August 29th to October 5th, with a calm ripening season perfect for extended bottle aging. Corpinnat employs organic farming, hand-harvesting, and secondary fermentation in the bottle, all with a focus on terroir expression.

Vinification and maturation

Each grape variety is fermented separately with carefully selected, proprietary yeasts. The primary fermentation lasts approximately 28 days at 16 degrees Celsius, along with fine lees for added depth. The tirage, which is the bottling with yeast and sugar to initiate the secondary fermentation in the bottle, is followed by aging on lees at 17 degrees Celsius for approximately six years. The disgorgement date is printed on the back label and marks the time at which the yeast sediment is removed. Brut Nature means zero dosage here, which keeps the wine tight, pure, and gastronomic. Alcohol is 11.5 percent and the total acidity is 6.0 grams per liter, figures that explain the tension in the glass. The wine is certified organic and vegan.

Grape composition

Macabeu 35 percent. Macabeu offers white blossom, white fruit, and a round finish.
Xarel·lo 28 percent. Xarel·lo provides backbone, a salty minerality and ageing potential due to its higher natural acidity.
Parellada 37 percent. Parellada provides airy freshness, fine citrus, and an extremely delicate mousse.

Together, this produces a profile that is both ripe and crisp, exactly what you look for in Gran Reserva Brut Nature.

Tasting notes and serving suggestions

The bouquet opens with ripe white fruit, citrus zest, and subtle brioche. On the palate, you'll taste precision and length, with very fine bubbles, a creamy texture, and a dry, crystal-clear finish. Serve at 8 to 10 degrees Celsius. Perfect with oysters, sea bass tartare, or seafood tempura, and surprisingly good alongside veal tenderloin with a light jus or dishes featuring umami and mild spices.
