What does a Pecorino Wine taste like?

So, what does the Pecorino grape actually taste like? Well, in warm Italy, it accumulates a lot of sugar, resulting in a vibrant white wine. Pecorino prefers a cool climate, so the vines are often planted high where the wind can do its work. The vines often yield little, but the grapes that are ready to be picked produce a powerful and refreshing white wine.

Pecorino typically offers aromas of peach, green apple, citrus notes, and hints of leek and peas. The palate offers a fresh palette with fruity notes at the forefront. You'll usually find hints of green apple, peach, lychee, orange, and asparagus. The back end of the palate is usually white pepper and a touch of minerality.
