The origins of Pradio Sobaja Sauvignon Friuli are unique. We're traveling to the far northeastern tip of Italy: Friuli. A small region, yet one with its own unique character. Although this wine region's fame is overshadowed by the likes of Veneto, Tuscany, Piedmont, and Puglia, it's still among Italy's finest wine connoisseurs. It's no small feat in terms of production either: Friuli remains firmly in the top 10 of Italy's most productive wine regions.
So what accounts for the success of this wine region? It's largely due to its natural characteristics. The Alps lie to the north, while the Adriatic Sea lies to the north. This prevents the freezing temperatures from the Alps, while the vineyards benefit from the fresh sea breeze from the Adriatic. This creates an ideal, temperate growing season, from which Sauvignon Blanc, in particular, thrives.
When Cielo's expert winemaker deems the grapes ripe enough, the harvest can begin. This takes place exclusively at night, when the Sauvignon Blanc grapes are still pleasantly fresh. After fermentation, the juice is left to age briefly on its own lees, which adds the necessary complexity. The result is fragrant tomato leaf, delicate Italian herbs, and invigorating citrus notes. The sparkling, mineral-rich finish is the icing on the cake for this Pradio Sobaja Sauvignon Friuli from Italy.
