The vineyards are located in the south of Puglia, where warm days are alternated with cooler nights.
- Location / origin: Around San Marzano in the province of Taranto, within the Salento IGP designation in Southern Italy.
- Altitude: Approximately 100 m above sea level.
- Soil: Shallow soils with a medium-fine texture.
- Climate & influences: The difference between day and night temperatures helps to retain freshness in the grapes alongside ripe aromas.
Gentle pressing and cool processing protect the fresh aromas.
- Harvest & pressing: The harvest takes place in August. After destemming, the grapes are gently pressed and the juice is allowed to settle at a low temperature.
- Fermentation & maturation: The clear juice is fermented at a controlled temperature in stainless steel tanks. Further maturation also takes place in steel, ensuring that oak aromas play no role.
The combination brings together floral softness and fresh tension.
- Sauvignon blanc – Salento: Contributes citrus aromas and lively acidity.
- Malvasia bianca – Salento: Provides floral scents, ripe fruit, and a softer texture.
