This Palau rosé cava is simply a celebration in the glass. But before it reaches that point, the Palau family has a lot of work to do. It all starts in the beautiful vineyard filled with the Trepat grape. The name Palau comes from the Catalan translation, meaning "palace." The vineyards and the beautiful winery are situated on the site of a former Roman palace. The stunning surroundings, with their abundance of forests and flowers, have a significant impact on the excellent harvest.

The vineyard today has an average age of forty years and produces full, vigorous bunches. Because the vines have deep roots in the chalky subsoil, they can easily absorb moisture. This is crucial, as summers can be very hot and long. Fortunately, the cool wind and nighttime temperatures also contribute to a smooth growing season. When the grapes have reached perfect ripeness, they are harvested in the early morning. They are pressed immediately, and the blend is then assembled by the winemaker, leaving the rest to the Palau family.

Cellar storage for the Cava Palau Rosé

Once the rosé is ready, it is bottled with yeast and sugar. This method is called the "methode traditionnelle" (traditional method), essentially the same as for French Champagne. It develops its bubbles in the bottle for ten to twelve months and then rests wonderfully in the Palau cellars. After this period, the Cava is a reality, and we can enjoy the fine quality of the Palau family.
