Aulico Vermentino Terre Siciliane is produced by one of Italy's largest cooperatives, Cantine Ermes. A cooperative involves several local winegrowers working closely together to market wine under a common name. Cantine Ermes was founded in July 1998. At the time, it consisted of just nine winegrowers located in western Sicily. Today, Cantine Ermes is much larger and boasts astronomical production figures. 2,373 members represent a whopping 12,648 hectares of vineyards. Total production now totals 11.5 million bottles per year, making Aulico a truly large winery.
