The Pago Negralada vineyard is planted with Tempranillo and benefits from a continental climate with warm summers and cold winters, resulting in a long ripening period and concentrated grapes. The soils consist of stony layers with good drainage, forcing the roots to search deeply for water and nutrients, and the grapes form small, flavorful berries. From this single vineyard, the wine team selects the bunches that give this cuvée the power, freshness, and refinement it deserves.
Vinification and maturation
Abadía Retuerta Pago Negralada Tempranillo is made from 100% Tempranillo, making it the estate's purest expression of this grape. After being harvested by hand, the grapes are carefully selected and fermented, with great attention paid to preserving the fragrant fruit aromas and developing a fine tannic structure. The wine then ages for 16 months in French oak barrels, during which time it develops its structure, complexity, and length. The oak aging is crucial for integrating the aromas of fruit and spice without overpowering the Tempranillo character. With 14.5% alcohol, 14g/l residual sugar, and 5.22g/l acidity, the wine presents itself as powerful and concentrated, yet with an elegant balance that makes it particularly suitable for table service.

On the palate, it is simultaneously elegant and powerful, with soft, fine-grained tannins that create a refined texture and a long, lingering finish. Its combination of concentration and elegance makes it an ideal pairing with gourmet dishes such as grilled or roasted beef tenderloin, beef ribs, or steak with truffle, as well as with game dishes featuring wild boar, venison, or other noble game with rich, spicy sauces.
