- Vineyard & Harvest: The grapes are rigorously selected and hand-harvested into 20 kg crates. This meticulous approach helps ensure the fruit arrives at the cellar intact and precise.
Vinification and Aging
In the cellar, everything revolves around a pure, fresh style with as much precision as possible.
- Harvest & Selection: After manual picking, an additional selection takes place on a sorting table, after which the grapes are destemmed and gently pressed. This keeps the wine's foundation crisp and refined.
- Fermentation: First, there is 3-4 hours of cold maceration at 10 °C, followed by static settling and alcoholic fermentation in stainless steel at 16.5 °C. This approach preserves the pure fruit expression and gives the wine its fresh, clear profile.
- Bottle Aging: After filtration and bottling, the wine rests in the bottle for another 30 days before distribution. This allows it to become slightly more harmonious and well-rounded in the glass.
