Palau's vineyards are located in the beautiful Penedès region of Spain. Here, the climate is perfect for growing the three grape varieties Macabeo, Xarel-lo, and Parellada. These nourish Palau's Cava, and the commitment to upholding this Spanish pride is evident in the rich flavors and aromas. But before we get to that point, let's return to the vineyard. The now mature vineyard has deep roots in a subsoil of loam, clay, and gravel, allowing the plants to easily absorb moisture from the soil. This is essential, as summer temperatures can be very high. The fresh sea breeze contributes to the gradual nourishment of the grapes, leaving this Cava with a wonderful freshness.
