Fruity Chardonnay grapes from Kaiken Estate

One of Chile's most famous winemakers, Aurelio Montes, decided to establish Kaiken Estate in 2002. The name refers to a species of goose native to Patagonia, which annually migrates across the Andes Mountains from Chile to Argentina. The Cabernet Sauvignon grapes are planted in Agrelo, Lujan de Cuyo. The vineyards for this Malbec are located 40 kilometers south of Mendoza and at an altitude of 950 meters above sea level. The climate is windy and semi-arid. Cold winters alternate with warm summers. The temperature differences between day and night can be significant, but this is very beneficial for the ripening process. The loamy soil produces fruity grapes with soft tannins. The Chardonnay grapes are harvested entirely by hand around February and brought to the winery, where they undergo manual selection. After sorting, the grapes undergo 20 days of fermentation in concrete tanks with selected yeasts. Before being released, the wine is aged for another month in the bottle. A conscious decision was made not to age in oak to preserve the Chardonnay's freshness.
