The Trial of Il Passo Nerello Mascalese Zabu

Il Passo Nerello Mascalese Zabu is made of 85% Nerello Mascalese and 15% Nero d'Avola. Before pressing, the grapes are lightly dried, a technique Vigneti Zabu borrowed from the Amarone region. Because the grapes are dried before pressing, the juice becomes much more intense and concentrated. While there is less juice, the quality is all the higher. Finally, Il Passo Nerello Mascalese Zabu is lightly aged for six months in French and American oak barrels. This gives the wine even more character. All of this combined makes this a perfect wine from the beautiful island of Sicily.
