La Rocca is a single, organically farmed vineyard.
- Location / origin: The slope of Monte Rocchetta is located near the castle of Soave, in the Soave Classico area of Veneto in Northern Italy.
- Soil: Limestone of marine origin and clay form the subsoil here. This is a characteristic distinction of this specific vineyard.
- Vineyard: The vines are 10–50 years old. Organic cultivation aligns with Pieropan’s focus on preserving the vineyard.
A late harvest and long maturation give the wine depth.
- Harvest: The grapes are picked by hand at the end of October, often in 2 rounds to select the ripest bunches.
- Fermentation: After destemming and gentle pressing, fermentation begins at 14–18 °C in enameled concrete tanks. It is continued in French and Slavonian oak barrels.
- Maturation: The wine remains on the fine lees for 12–15 months, for 70–80% in French tonneaux and for 20–30% in large Slavonian barrels. This provides extra body and cohesion. This is followed by rest in the bottle.
The local grape is given every opportunity in this cuvée.
- 100% Garganega – Soave Classico: Garganega provides ripe fruit, almond notes, and the structure for long oak aging here.
