Special vinification process for De Toren Delicate

Located in Stellenbosch, South Africa, De Toren is one of the region's most distinctive wineries. They are fully focused on crafting cutting-edge red wines. These wines are all known for their complexity, aging potential, accessibility, and high quality. One of De Toren's unique aspects is the use of gravity during the winemaking process, resulting in wines with a distinct tannin structure. Delicate is a blend of Cabernet Sauvignon, Merlot, and Malbec grapes. The grapes are carefully harvested from the finest vineyards at peak ripeness and then undergo a unique vinification process. By using the saignée method for the Malbec and aging the Cabernet Sauvignon and Merlot in wooden barrels for a year, a fusion of two vintages is created that captivates the senses.
