The Andes define the landscape here, as well as a significant portion of the conditions in the vineyard.
- Location / origin: The Malbec comes from the Uco Valley in Mendoza, on the eastern side of the Andes in Argentina. Salentein works with its own vineyards at various altitudes.
- Altitude & climate: The estates that make up the Barrel Selection range are situated between 1,050 and 1,700 meters. Plenty of sun during the day and cool nights support gradual ripening and help maintain acidity.
- Soil: The subsoil of the estates is predominantly alluvial: material deposited by water, consisting of sand and stones. Good drainage makes precise water management important.
- Water: The vineyards are irrigated with meltwater from the Andes. In this dry region, this allows the house to specifically guide the growth of the vines.
The winemaking is focused on combining the rich fruit with a supple structure and the influence of oak.
- Fermentation & extraction: During fermentation, ‘rack and return,’ also known as délestage, is applied. This involves temporarily separating the juice from the skins and then returning it. This gives the winemaker control over the extraction of color and tannins and helps preserve the fruity character.
- Maturation: The wine is aged in French oak barrels. The wood adds nuances of vanilla and spices, while the maturation allows the different flavor components to further integrate. The ripe fruit remains clearly recognizable throughout.
The composition focuses entirely on the grape with which Argentina has gained such international fame.
- 100% Malbec – Uco Valley: Malbec gives the wine its deep color, full body, and pronounced dark fruit. The fresh acidity and tannins provide structure, making it a great match for roasted and grilled dishes.
