Blason d'Aussières 2021 is the expressive second wine from Domaine d'Aussières and is the accessible showcase of a house with exceptional historical roots. The estate is part of Domaines Barons de Rothschild Lafite, the winery behind the world-famous Château Lafite Rothschild, considered the benchmark for Bordeaux as early as the 18th century. This centuries-old expertise translates here into a refined Languedoc style, where precision, balance, and elegance are paramount. Vineyards and region
The grapes come from France, from the Languedoc-Roussillon region, within the AOC Languedoc appellation. The estate is situated in the hills just behind the Mediterranean coast near Narbonne, an area where altitude and maritime influences provide a cool breeze. Through years of experience, Domaine d'Aussières has been purposefully developed as a cohesive ecosystem where soil, climate, and viticulture are perfectly aligned. This cooler terroir gives the wines their characteristic balance and finesse and clearly distinguishes Aussières from warmer, heavier Languedoc expressions.
Vinification and maturation
In the cellar, a combination of traditional methods and targeted choices gives this wine its signature. Alcoholic fermentation takes place in temperature-controlled stainless steel and concrete tanks. Some Carignan is fermented with whole bunches, a specialized technique that adds aromatic tension and spicy depth. During fermentation, regular pump-overs ensure gentle extraction, preserving the tannins' finesse. The total maceration lasts 15–20 days. Only 20% of the wine is aged for 10 months in wooden barrels, a deliberate dosage that provides structure and length without overpowering the Mediterranean fruit, an approach that makes this wine remarkably elegant for its price range.

Syrah, at 43%, forms the backbone of the wine, delivering concentration, dark fruit and structure.
Carignan – Languedoc
Carignan, 31%, provides freshness and spiciness, enhanced by partial fermentation with whole bunches.

Grenache noir, 17%, adds roundness and ripe fruit.
Mourvèdre – Languedoc
Mourvèdre, 9%, gives depth and a subtle savoury accent.
Tasting notes and serving suggestions
The color is deep garnet red with purple reflections. The nose reveals aromas of blackberry and blueberry, followed by spicy garrigue notes. On the palate, the wine combines juicy fruit with a refined structure and supple tannins, with freshness creating tension. The finish is long and layered, with notes of toast, violets, and licorice. Serve at 16–18°C. This wine pairs well with grilled meats, lamb dishes, and spicy Mediterranean dishes.
