Khipu Cabernet Sauvignon is the star of the Khipu collection, a wine we were immediately enthusiastic about. The story behind Khipu wines begins with the Incas, who used a communication system involving cords and knots during their travels through the Central Valley. For centuries, the purpose of these cords and knots remained a mystery, but we now know they were a form of communication. These knotted cords are also featured on the label of Khipu Cabernet Sauvignon.

Khipu is located in the heart of the Central Valley, where the grapes for this red wine come primarily from the Maipo and Rapel Valleys. These two valleys are known for their ripe black fruit notes, essential for Cabernet Sauvignon. The remaining grapes come from the Curico and Maule Valleys, perfect areas for robust grapes. The Cabernet Sauvignon grapes are harvested entirely by hand, and after harvesting, the bunches are carefully destemmed and pressed. The majority is then aged in stainless steel vats to preserve the wine's freshness. A small portion is aged in French oak to give the wine even more power and suppleness.

What does the Khipu Cabernet Sauvignon taste like?

The result is a deep, dark red wine with an almost black core. The aroma reveals ripe black fruit, spices, licorice, cocoa, and a hint of vanilla. The palate is powerful and full-bodied, yet perfectly balanced. Notes of blackberry, currant, and Black Forest cherry blend harmoniously with hints of spice, dark chocolate, and leather. The finish is intense and full-bodied with soft tannins. Pair this red wine with a fine piece of red meat, gourmet dishes, or cheeses.
