The name ES-56 refers to the geological past of the vineyards.
- Location / origin: The plots are located near Saint-Satur, within the Sancerre appellation in France's Loire Valley.
- Soil: Silex, or flint, from the Eocene epoch. The reference to 56 million years in the name relates to this soil history.
- Vineyards: Old vines on warm slopes, with low yields. The plots are farmed organically.
Fermentation in different materials gives the wine both fruit and additional structure.
- Fermentation: Part is fermented in temperature-controlled stainless steel tanks, part in French Tronçais oak barrels.
- Aging: 12 months on the fine lees, which are stirred regularly for 7–8 months. This lees contact contributes to the full mouthfeel.
- Bottle aging: After bottling, the wine rests for several months in the estate's cellars.
The classic white grape of Sancerre forms the basis.
