Renowned winemaker Franco Toros is always in the vineyards. He is the proud owner of the winery and constantly strives for the highest possible quality. The winery's origins date back to his grandfather, Edoardo, who laid the foundations in Novali, located in the heart of Collio Goriziano, in the early twentieth century. This area, also known as DOC Collio, is located in Friuli-Venezia Giulia, in northeastern Italy. A remarkable characteristic of this region is that some of its vineyards extend into neighboring Slovenia. With a total of 1,500 hectares of vineyards, primarily planted with white grape varieties, the region focuses on quality wines.
The Sauvignon Blanc grapes are carefully hand-picked, with only the finest specimens being selected. After this selective harvest, the grapes are gently pressed. Alcoholic fermentation then begins in stainless steel tanks. After fermentation, the wine is aged on the lees, which refers to the yeast cells that collect at the bottom of the tank. During this period, bâtonnage is applied, which means the yeast cells are regularly stirred. This process contributes to enriching the wine with a rounder flavor profile and adding complexity.
The Toros Sauvignon Blanc Collio has a straw-yellow color in the glass, with fruity notes of figs and some spicy hints of grass and sage on the nose. The presence of citrus and green pepper adds an intriguing complexity to the aroma. The palate is structured and powerful, while the palate is soft and subtle, beautifully balanced.
