The Picpoul de Pinet grapes are harvested during the cool night. This preserves their freshness. Once arrived at the winery, the grapes undergo a two-hour maceration before pressing. Only the very best grapes are pressed to ensure the highest quality. Nothing is left to chance. Fermentation then takes place at a controlled temperature of 16 degrees Celsius. Finally, the wine is aged on the lees for three months.
The pale yellow Picpoul de Pinet has a delightful aroma of white flowers interwoven with notes of anise. Subtle yet incredibly appealing. The palate is vibrant, with plenty of exotic fruit like pineapple, complemented by dill and fennel. A pleasantly long finish completes the tasting experience.
