The family business Billecart-Salmon

The Billecart-Salmon Champagne House is located approximately 30 kilometers south of Reims in the heart of the Champagne region. Founded in 1818 by Nicolas François Billecart and Elisabeth Salmon, it continues the family tradition of quality. Billecart-Salmon sources its grapes from 40 different cru sites in Champagne across an area of ​​approximately 220 hectares. Most of the grapes used for winemaking come from within a 20-kilometer radius of Épernay, including the Montagne de Reims, the Vallée de la Marne, and the Côte des Blancs. Its commitment to excellence is evident in its exceptional champagnes, boasting rare complexity and breathtaking freshness. This renowned Champagne House is one of the few remaining family-owned and is now run by the seventh generation.

The vinification of Champagne Billecart Salmon Nicolas Francois

The grapes are carefully harvested in the winery, followed by cold stabilization at 5°C (52°F) and cool fermentation in stainless steel tanks. The temperature is initially 12°C (54°F) and gradually rises to 18°C ​​(62°F) for malolactic fermentation. This exceptional blend was created in 1964 as a tribute to the founder of the Champagne House. It is a blend of Grand Cru wines from the Côtes des Blancs and Montagne de Reims. Vinification takes place partly in traditional oak barrels, adding a touch of complexity. A characterful and, above all, elegant wine. The Nicolas Francois Champagne is a light gold in color. The aroma is complex with floral nuances, supported by subtle notes of sweet rolls. On the palate, it's wonderfully balanced, both powerful and fresh. The finish is aromatic and pleasantly long.
