The name Les Deux Moulins refers to two old watermills on the Petite Grosne, located in the middle of the limestone-rich landscape of the southern Mâconnais. Louis Latour has opted here for a completely unoaked style in which floral finesse, fresh almond, and a bright mineral finish beautifully showcase the classic elegance of Saint-Véran.
The vineyards are located in Saint-Véran, in the far south of the Mâconnais and surrounding the famous Pouilly-Fuissé appellation.

Location / Origin: Saint-Véran consists of two separate zones around Pouilly-Fuissé and the Solutré ridge. Les Deux Moulins derives its name from two watermills that sit over the Petite Grosne; rainwater is filtered through the chalk layers before flowing toward this river.

Soil: The vines take root in chalk and clay from the Jurassic period. The limestone-rich subsoil provides good drainage and forms an important foundation for the mineral tension that is so characteristic of this origin.

Vineyard: The vines are on average 30 years old and yield approximately 50 hl/ha. This provides sufficient ripe fruit without losing the fresh, refined style of the appellation.
The vinification is entirely focused on purity, aromatic precision, and maintaining the natural identity of the terroir.

Harvest & Selection: The grapes are mechanically harvested and pressed upon arrival, after which the juice goes into stainless steel tanks.

Fermentation: Alcoholic fermentation proceeds slowly at a controlled low temperature in stainless steel. This keeps the delicate floral aromas and fresh fruit clearly preserved. The wine then undergoes 100% malolactic fermentation, which adds extra roundness and softness to the structure.

Maturation / Aging: The wine is then aged for 8–10 months in stainless steel tanks. By working completely without oak, the flowers, almond, and the mineral side of Saint-Véran remain clearly in the foreground.
Saint-Véran is entirely dedicated to the great white grape of Burgundy.

100% Chardonnay – Saint-Véran: Chardonnay brings here a combination of floral aromas, fresh tension, and a round structure. The limestone-rich soils of the southern Mâconnais also give the grape variety a distinct mineral dimension.
