For Neropasso, grapes from different soils are brought together.
- Location / origin: The wine comes from Veneto in Northeast Italy and carries the designation of origin Rosso Veneto IGT.
- Soil: The plots differ in composition, including loam, limestone, and basalt. Calcareous layers and stones are found in several places.
The drying process, also known as appassimento, requires healthy grapes and good ventilation.
- Harvest & selection: The grapes are hand-picked. Loose bunches are preferred so that air can easily circulate between the berries.
- Appassimento: A selection is lightly dried in perforated crates in a ventilated room. The loss of moisture concentrates the fruit; after this, the grapes are gently pressed.
- Maturation: For the 2023 vintage, 40% of the wine matures for 6 months in used tonneaux, the rest in stainless steel. The wooden barrels support the round structure, while the tank maturation preserves the fruit.
The blend of the 2023 vintage combines regional grapes with an international variety.
- 40% Corvinone – Veneto: Provides body and ripe dark fruit to the blend.
- 30% Corvina – Veneto: Brings the characteristic cherry fruit and fresh tension.
- 30% Cabernet Sauvignon – Veneto: Adds structure and firmness to the soft fruit base.
