The Spanish bubble of Arte Latino

Cava is the Spanish equivalent of Champagne. Like Champagne, the production of Cava is subject to many regulations. For example, only a few grape varieties are permitted for making Cava. Macabeo, Parellada, and Xarello are commonly used, coincidentally also the grape varieties used in this Arte Latino. However, the plump Chardonnay is increasingly being used in Cava. Furthermore, this Cava Arte Latino is made using the Methode Traditionelle, in which the wine undergoes a second fermentation in the bottle, a practice borrowed from the Champagne region. This gives Spanish Cava an almost equally beautiful mousse as its French counterpart. At Arte Latino, the second fermentation in the bottle lasts approximately three weeks. The already fermented wine is combined with sugar and yeast cells, creating the delicate bubbles. After the second fermentation in the bottle, Cava Arte Latino matures for a full 12 months in the bottle before leaving the cellar.
