Ayala's story dates back to the mid-19th century, making it one of the oldest Champagne houses still operating. It all began with a Colombian diplomat, Edmond de Ayala, who married a Frenchwoman. Part of the dowry was an immense estate complete with vineyards in the village of Ay. The foundation for the Champagne house was thus quickly laid. A brother of the founder was a welcome guest of the British King Edward VII. He let him taste Ayala Champagne, but it was deemed too sweet. With the king's help, the recipe was adjusted, and Ayala became a purveyor to the British royal family. Ayala is still known for its dry style of Champagne.

The Chardonnay is grown in vineyards in Chouilly and Le Mesnil-sur-Oger. The bottles are aged for at least eight years in Ayala's cellars. It takes time, but the result is more than impressive.
