Yes, a classic Chablis, this one from Domaine Chanson: rich, full-bodied, and with refined, soft acidity. The vineyards for this Chablis are situated on the best slopes, allowing the Chardonnay grapes to enjoy ample sunshine and cool nighttime temperatures. The calcareous loam soil gives the wine all the hallmarks of an authentic Chablis. It's no wonder this is such a beloved wine.

Diligent viticulture and perfect ripeness

Chanson is a winery with a long and rich history. Founded in 1750, it is one of the oldest. The 45 hectares of vineyards are located in Burgundy and all have Premier Cru and Grand Cru status. With these vineyards in the most beautiful villages of the Côtes de Beaune, this winery has made a significant contribution to the region. They demand diligent viticulture and perfect ripeness, vinifying all their white and red wines from 100 percent whole bunches in their state-of-the-art facility on the outskirts of Beaune. They use Champagne-style fractional pressing to gently extract the juice and then age the wines in barrel, using no more than 30 percent new oak for the reds and 20 percent new oak for the whites. Chanson wines are characterized by elevated and exotic aromas, a supple texture, and rich, dense fruit without heaviness. Chanson is particularly obsessed with maintaining top quality across its entire range.

What does Chanson Chablis taste like?

This Chablis has a beautiful, clear color with aromas of citrus fruit, complex minerals, and a hint of white pepper and lime. The taste is truly unbeatable: a round Chablis with a lovely, thick structure on the palate. Flavors of peach, green apple, pear, and some green herbs like mint. The finish of this Chanson Chablis is very rich and mildly dry. It's a delicious wine to enjoy on its own, but also pairs beautifully with lobster, crab, and refined fish dishes, chicken, and cheeses.
