With a total of 10 hectares of vineyards, Chardonnay is the estate's main grape. In this somewhat cooler climate, it develops a unique freshness. With production limited to no more than 30 hectoliters per hectare, the Chardonnay develops considerable depth and concentration. The grapes ferment and mature in barrels, on fine lees, giving it even more depth and minerality. The four hectares of Chenin Blanc and Mauzac perfectly complement the Chardonnay. The old Mauzac vines give the wine extra richness and distinctive aromas, reminiscent of quince, among other things. The grapes undergo low-temperature fermentation on their own, natural yeasts. The lowest possible dosage of sulfites is used, and the wine is only lightly filtered before bottling, to maximize the full range of flavors and aromas. This results in an impressive white Limoux, which can easily be considered one of the finest wines from this unique region.
