Pinot Grigio originates from France (where it's called Pinot Gris) and is most likely a mutation of Pinot Noir. Monks spread it from Burgundy to other countries. This grape naturally has a high sugar content and relatively little acid, and therefore thrives in the relatively cooler north of Italy. Although Pinot Grigio is considered a white grape variety, the grape skins still retain just enough color to make a light rosé, or, more elegantly (we are in Italy after all), a wine with a "blush on the cheeks." The grapes for this Il Rifugio (Italian for The Refuge) are hand-picked, gently pressed, and the must remains in contact with the skins for 24 to 48 hours to achieve the characteristic pinkish, coppery color. Temperature-controlled fermentation and refrigerated aging in stainless steel tanks preserve the wonderfully fresh character. Drink young. Tasting notes: Light pink in color with a coppery sheen.
