A Spanish alternative to Champagne
Cava was developed in the second half of the 19th century. José Raventos, a well-known name among Cava drinkers, was the founder of the Spanish equivalent of Champagne. He saw all of Europe enjoying Champagne from France and was eager to create an alternative for Spain. In 1872, he succeeded in producing the first bottle of Cava. The similarities with Champagne are striking. Only three grape varieties may be used for Cava: Parellada, Xarel-lo, and Macabeo. Furthermore, the "métho traditionelle," used in Champagne, is also mandatory in the production of Cava. After bottle fermentation, the bottles of Cava are aged for at least nine months in the impressive cellars.
