Sherry comes from the province of Cádiz in Andalusia, Spain. Cádiz is located between the cities of Jerez de la Frontera (from which this wine is named) and Puerto de Santa Maria. More than 90 percent of the vineyards are planted with the Palomino grape. The other two sherry grapes, Pedro Ximenez and Muskadel, are primarily used to sweeten the sherries. Pedro Ximenez Sherry is vinified from sun-ripened grapes of this variety. The grapes are harvested in late September to build up a high sugar content, allowing for the production of a deliciously sweet sherry.
