Description

A sparkling Italian wine of the highest quality. This noble vine has found ideal climatic conditions in the Dolomites to develop its unique freshness, fragrance, and intense aromatic notes. The vineyards are situated on beautiful hills along the Adige Valley at altitudes ranging from 350 to 600 meters above sea level. The strong temperature fluctuations promote the synthesis and accumulation of aromas and maintain a refreshing acidity.

Only the finest grapes are carefully selected and hand-harvested. The grapes are then taken directly to the cellar where a rigorous selection process awaits. After destemming and crushing, the must is cooled to 12 degrees Celsius and left in contact with the skins for 8-10 hours to slowly extract the elegant and rich aromatic compounds. No pressing takes place, thus preventing the extraction of polyphenols and tannins in the must. To preserve the aromatic richness of the Chardonnay grown in the beautiful Dolomite region, vinification takes place exclusively in steel tanks, without aging in oak barrels. This aging lasts approximately 3 to 4 months, allowing the wine to develop its richness and aromatic complexity. The base wines all undergo malolactic fermentation. Rotari Brut is processed using the Champenoise method. The second fermentation lasts 35-40 days and takes place in the bottle. The same bottle where the wine rests on the yeasts for at least 24 months.

The Rotari Cuvée 28 Brut is a straw green in the glass. This Chardonnay evokes ripe yellow fruit, complemented by hazelnut, almond, and a hint of vanilla. The structure, the fruit, the acidity—everything is in perfect balance. With a delicate freshness and a mineral finish. Elegant and complex. Exceptionally fine quality! This Brut is ideal as an aperitif but pairs well with any meal.
