Domini Veneti is the symbol of the high-quality wines of the Valpolicella Classica and Veronese regions. The winery represents the most authentic expression of a clearly defined territory, both geographically and historically. In 1989, the winery launched its first wine series under the auspices of the Cantina Valpolicella Negrar cooperative. They collaborate with approximately 230 small growers and, over the course of the century, have established themselves as Italy's leading cooperative. What makes Pruviniano Valpolicella Ripasso Classico Superiore unique is its production process. This process, called "Ripasso," involves infusing the Valpolicella wine with the remains of the Amarone grapes, resulting in a richer and more complex aroma and flavor. In early October, the grapes are harvested entirely by hand and brought to the winery. Here, the grapes are crushed and destemmed, and fermentation takes place for 10 days. Finally, the wine is aged for nine months in wooden barrels.
